We have been studying Little House in the Big Woods this last semester for literature. On the last day we had a little (and I mean really little and quick) celebration. We made can lanterns, played a couple of old pioneer games and made a few treats. We started out making Molasses Taffy which turned out horrible. I think I overcooked it, so it had a burnt black licorice taste. I decided we would try one more and these were a hit. This kids thought the texture was different, but all in all we really liked them. I am interested in making them with honey or agave.

Apple Candy
2 T Gelatin
1 1/4 C cold applesauce
2 cups sugar
1 cup chopped nuts (optional)
1 t vanilla
Soak gelatin in 1/2 cup cold applesauce for 10 mins. Put rest of applesauce and sugar in pot and boil for 8-10 minutes. Add the gelatin/applesauce mixture, and boil for 15 more mins stirring constantly (low boil) Remove from heat and add vanilla (and nuts if you choose). Pour into a greased pan. and let sit overnight in the fridge. Then cut into squares and roll into powdered sugar. And Enjoy!
