Did you really think Yummy?
When I think Zucchini, my first thought isn’t always yummy. I think things like giving it to your neighbors because you have too much, or my mom hiding it in spaghetti and thinking we didn’t notice it was in there. But really there are so many ways to use Zucchini, and make it yummy! This week and maybe some of next I will share with you some things I am doing with ALL 3 billion of my zucchini! I swear I pick at least 3 a day. This was my first garden and I planted 4 yellow zucchini plants and two green. It’s crazy how one plant can produce totally different looking zucchini. Like Big Daddy below, he was huge!! Next year I don’t think I will plant as many. Or at least I will do different kinds of squash!
Here is a tip I heard from someone of Facebook. Shred your Zucchini and freeze it. But shred it in 1 cup measurements on a cookie sheet and then once they are frozen put them in freezer bags. This will be great so that you can add to to recipes all winter long or in my case I could use it for baby food!!!

Mmmmm. I love all the things you can do with zuchinni! Zuchinni boats, cake, bread, fries,sautéed w bacon and garlic, on the grill, homemade hot dog relish…. Yum!
