Zucchini Parmesan Casserole

Here is a super yummy, delectable, delightful and delicious recipe to make with squash.  I love the Our Best Bite girls and saw a recipe like this on their site and decided to adapt it.  Here is the original recipe.     I didn’t like the kind of cheese they had and so I adapted and came up with this.  It was so so so good!  Like thinking about it makes me want more and it’s breakfast time right now!!

Here is what I came up with….

Zucchini Parmesan Casserole

  • 7 T butter
  • 2 cups onion (yellow or white) sliced
  • 4-6 cups zucchini or yellow squash (sliced or diced)
  • 1 t salt
  • 1/2 t pepper
  • 1/4 t pumpkin pie spice/ or nutmeg (I know it sound weird, but it’s good)
  • 1 tsp garlic (or 2 cloves)
  • 2 T flour
  • 1 cup milk
  • 1 cup bread crumbs (best of Italian style)
  • 1 1/2 cups Parmesan cheese
  • Oil
Instructions

Pre-Heat oven to 375 degrees.
Cut up onions into slices and saute on low in butter for about 20 mins until tender.  Add the zucchini and cook covered for 10 mins.  Add the salt, pepper, pumpkin pie spice, and garlic and cook and stir for 5 more mins.  {It is going to make your whole kitchen smell amazing!}
Add milk and flour together and pour onto Zucchini mixture.  Turn the heat up so that the milk mixture will boil.  Once at a boil, turn it down and let it simmer until you see that the sauce has thickened. 
Pour mixture into a baking dish.  Mix together bread crumbs and cheese and spread on top of zucchini mixture.  Drizzle oil over the top and bake for 25 mins or until bubbling and browned a little.  Let sit for a few minutes before you eat.  
And Enjoy!  

It looks kind of weird, but it is SUPER YUMMY!  I served this meal with grilled chicken and my kids actually really liked it!!  Let me know how you end up liking it if you try it!
