It was my 13th wedding anniversary Sunday. I can’t believe how fast 13 years has flown by. You can read more about how we met here. I am more in love with him now than when I thought I couldn’t be more in love with him when we first got married! It’s crazy how time and challenges, and all the we have been through has brought us closer together. I am so grateful for him and the amazing father, husband and provider he is! It’s not always easy, but we make it work and I love him so much! For our anniversary, since it was on a Sunday, we went out on Saturday night. Sunday my daughter set a nice table for dinner. We, my husband and I, made Salmon, Parmesan Broccoli and Quinoa.
It is super easy to make. We buy our salmon (which we don’t buy very often) from Costco in the individual packets.
Honey Garlic Glazed Salmon
Ingredients:
7 Pieces of Salmon thawed
2 Tbs Soy Sauce
4 T Honey
2 1/2 T Lime Juice
4 t. Dijon Mustard
4 t Olive Oil
2 T Garlic
Directions:
Lay salmon on a baking sheet lined in foil.
Mix together all other ingredients and pour over salmon
Bake on foil lined baking sheet on 425º for 15 mins until flaky!
Serve with Steamed Broccoli and Quinoa, and spoon some of the delicious sauce over your quinoa or rice
This meal is so easy! It took us about 10 minutes to throw together and it only takes 15 minutes to cook.
Quick Tip #1- For easy clean up, fold the edges of your pan around the salmon so the liquid says around the salmon
Quick Tip #2- If your salmon is still frozen, put it in a hot water bath for about 30 before cooking and it will thaw out quickly.
