Have you seen the movie The Secret Life of Walter Mitty? I loved it! Such a great show. Anyway, you know the part where they talk about Clementine Cake? It looked and sounded so yummy I decided I had to figure out what it was and try it! Especially since it was Clementine season. So I googled tons of recipes and most of them were adapted from this site. Also, most were made with Almond flour, which I didn’t have so I adapted it to Whole Wheat Flour. With the WW flour it was pretty dense, but tasted amazing. You could totally make it with white flour and it would be just fine.
Clementine Cake
4-5 Clementines
6 eggs
1 Cup Sugar
2 Cups Flour
1 teaspoon baking powder
1 1/2 t almond extract
GLAZE
1 1/2 C Powdered sugar
3 T clementine Juice
Instructions
Put the clementines in a pot filled with water and bring to a boil and cook on low for 2 hours.
Drain, cool and cut in half to get the pits out. Toss in blender or food processor. Yes peels and all!
Preheat oven to 375º. Butter and if you want line a Springform pan.
Beat the eggs, and add all ingredients together and add the clementine mixture last.
Bake cake for an hour. Make sure the skewer comes out clean. Cover with foil if you think the top might burn. I didn’t have to.
Remove from oven when done and leave in pan on cooling rack until cool. Then remove from Springform pan.
Add glaze and enjoy!

Hmmmmmmmm!! That looks so good! We loved the Secret life of Walter Mitty, such a good movie! I’m hoping to buy it soon when the price gets a little cheaper 🙂
