I LOVE pancakes, but when I was on the no sugar/no carbs eating plan I couldn’t have any. {I am on it again and have 5 days left!! I feel great and hoping for at least 10 lbs!!} Anyway, my sister told me about these Pumpkin (squash) pancakes, or Banana breakfast pancakes that I could eat on the food plan! They are both Super Yummy!!! One I eat for breakfast and the other for lunch or dinner!
8 oz mashed banana
1/4 c Cottage Cheese
1 Egg
pinch of Baking Soda and salt
1/3 cup Oat Bran
1 t Cinnamon
1 T Wheat Germ (optional)
1 T Chia Seeds (optional)
Mix together. Cook on skillet or griddle that is spayed with cooking spray. Flip when bubbling. Serve with Honey or Agave on top. Because I was on the no sugar diet I just had 1 tsp of butter on them.
*This is a serving size for one, but it makes 3-4 nice size pancakes

1 egg

These pancakes are also perfect for my little almost one year old to chow down on!!
