Easy Homemade Fresh Basil Pesto

I wish I would have planted more fresh herbs in my garden this year.  I had a ton of Cilantro and it all burned up from the heat.  I planted a ton of basil, but only a few cups came up.  I was pretty excited though to make my own fresh Pesto for the first time.  My awesome friend told me how to make it, and then I talked to my sister and she told me she froze it in ice cube trays and then would have pesto when she needed it!  GENIUS!

I found this recipe here and adapted it to what I had.

Fresh Basil Pesto

  • 4 garlic cloves
  • 4 cups fresh basil leaves
  • 1 cup Parmesan Cheese {grated}
  • 1 tsp Kosher Salt
  • 1 tsp pepper
  • 1 c extra virgin Olive Oil

I just blended it it all up in my blender.  You can add 2/3 cup pine nuts or walnuts if you like.  I just didn’t have any.  I used about 1/2 cup on our pasta that night for dinner and then froze the rest in plastic jam containers.   With Pesto a little goes a long way!!

    We have a blendtec too, love it! We’ve not made pesto in it yet. Our current favorite is making frozen fruit into ice cream.
