II went of sugar last week and by Friday I had a bad day and I broke and ate cookies at a girls night out. Then Saturday rolled around and I had a treat at our ward party. I decided then and there that I {for right now while I am not on my eating plan} I would still have 2 treats a week, but I would try to make them more healthy. A couple of weeks ago I made these brownies. They were SO SO good!
Ingredients
- 1/2 cup butter
- 1 cup Sucanat
- 2 eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup Whole Wheat Flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 3 tablespoons butter, softened
- 3 tablespoons unsweetened cocoa powder
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1 cup Powdered Sucanat {blend in blender}
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease 8 inch square pan.
- In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sucanat, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
- Bake in preheated oven for 25 to 30 minutes. Do not overcook.
- To Make Frosting: Combine 3 tablespoons butter, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup powdered sucanat. Frost brownies while they are still warm, but not hot!
These were really good and tasted just as good as any other brownie!

Dana, you really can substitute Sucanat for any sugar. I am going to try out a graham cracker recipe today using it!
