Here is one of my favorite bread recipes ever. It’s a Banana Zucchini Bread that tastes amazing! I made it last week with the Steviva instead of white sugar and it tasted excellent!!
BANANA ZUCCHINI BREAD
3 Eggs (whip until light and frothy)
3/4 Coconut Oil (or vegetable oil)
2/3 c Steviva Blend
1 c grated zucchini (you can also use yellow squash)
2 bananas mashed
2 t vanilla
3 cups flour (I used Whole Wheat)
1 T ground cinnamon
1 1/2 t baking powder
1 t baking soda
1 t salt
You can add dried cranberries or nuts if you like….I prefer not to!
Preheat oven to 325 degrees. Grease 2 8×4 bread loaf pans
In a large bowl, beat eggs until light yellow and frothy (I prefer to do all this in a bosch or kitchen aid). Add oil sugar, grated zucchini, bananas, and vanilla; blend together until well combined. Stir in the flour, cinnamon,m baking powder, soda and salt. Divide batter between the two pans
Bake in the oven until toothpick inserted in the center comes out clean, about 50 mins. Allow to cool in the loaf pans on a wire rack before removing and serving

Sounds good with the coconu oil. I don’t use that enough.

THis sounds absolutely delightful! we’ve been using stevia for almost a year now… still not sure how to use it in baking. my favorite is sprinkled on cut up fresh strawberries… and 1 lemons juiced, added to 1 qt cold water (i put the juice in first then fill in to 1 qt) then i put 4 packets of stevia in and shake really well. a really yummy lemonade. you can add crushed berries to this as well, mmmm.
but i wanted to know if you have other recipes using stevia instead of raw sugar. we’re trying to “detox” our family of this… 🙂 thanks!
