How to Make Homemade Pumpkin Soup {With A Special Ingredient}

I had every intention this fall to make a Pumpkin Soup using a real pumpkin and then using the hallowed out pumpkin as the bowl to serve the soup in.  It didn’t happen, but I did find a delicious pumpkin soup recipe on AllRecipes.com and adapted it to our liking!  The recipe originally called for toping the soup with bacon.  When I made the soup we didn’t have any bacon. My husband LOVES Maple flavored sausage so we tired it and it was excellent with the creamy pumpkin!  I know, it sounds weird, but it is the special ingredient in this delicious pumpkin soup!  Homemade Pumpkin Soup with Maple Sausage

The recipe is very simple and easy to make.  It does call for a lot of spices, butas far as chopping and cutting stuff up it is so easy!

Homemade Pumpkin Soup With Maple Sausage

Ingredients:

  1. 3 cups Chicken Broth (Use broth or 3 bullion cubes and 3 cups water)
  2. 1/2 t. Salt
  3. 1 29 ox Can Pumpkin Puree
  4. 1 small onion chopped
  5. 1/2 t. Thyme
  6. 1 Clove Garlic, minced
  7. 1/2 t. Black Pepper
  8. 1/2 t. Ground Cinnamon 
  9. 1/8 T. Pumpkin Pie Spice
  10. 1 Cup Heavy Whipping Cream
  11. 1 Lb Maple  Sausage 
  12. Fresh Parmesan Cheese

Directions:

In a large pan fry up the pound of Sausage, rinse and set aside. Homemade Pumpkin Soup

Combine all ingredients 1-9 in a large pot.  Bring to boil and then simmer on low for 30 minutes.  

Once simmered using a blender puree the soup in small batches. about a cup or two at a time.    Homemade Pumpkin Soup

Return soup to pot and bring to a boil for 20 minutes.  Homemade Pumpkin Soup

Add cream and sausage after you have removed it from the heat.

  Top with Parmesan

    Ooh, I love the addition of sausage. I think that’s just the flavor my hubby would need to make pumpkin soup worth eating!

    I never had a recipe so I’m definitely going to try this especially since it says can of it. 🙂 Throwing in the sausage sounds like a great touch.
