Wheat Free Protein Pancakes
Have you tried this stuff? Well you need to! It is SO good! It is not just your regular Agave Nectar yum, it is Vanilla Agave!! Need I say more? Okay I will!! Agave is a kind of natural sweeter that comes from a cactus type plant. Read about the health benefits here. We have started using this and honey to replace most of the sugar in our family. {except when we make our super unhealthy treats every once in a while.} But really you could probably use it in those also because it is super good and you use WAY less of it. I used it to replace the 4 cups of sugar in my Strawberry Freezer Jam, and only used 1 cup, and it tastes just as good. If you use it in recipes you used 1/3 of what the sugar is. So if it says 1 cup, use use 1/3 Cup. This vanilla kind we don’t use for baking. We buy just the plain agave nectar in a bulk 1 gallon container.

We mainly use the vanilla for sweetening plain yogurt, or the best ever….SYRUP. Yup, our family is a lover of pancakes and waffles, and have them about once a week. My husband is the best pancake maker ever!!. We used to buy regular syrup from Walmart, but it has SO much sugar,and since we have been trying to eat healthier we decided to try this and will NEVER go back!! It is worth the $3.50 every couple of weeks to have good syrup on our pancakes.

Okay, so now you’re probably thinking pancakes aren’t that healthy. Don’t worry we have also found TWO recipes for that. We used to be Costco krusteaz fans, and when I am not cooking my husband still is. He is all for quick and easy, but if I am going to eat the pancakes I pick from these two…
 
One is Whole Wheat Blender Pancakes. My mom made these a a lot growing up, and now that I have a good blender we love these.
Whole Wheat Blender Pancakes
  • 1 1/4 cups water, skim milk
  • 1 cup whole wheat kernels
  • 1 egg
  • 1 T butter or coconut oil (this is also somethings new that we have really started to like a lot)
  • 1 T honey or Agave
  • 1/4 tsp. salt
  • 1 T baking powder
In blender mix liquid and kernels of wheat on high for 3 minutes. Add egg, butter, honey, and salt. Blend for 20 seconds. Add baking powder and pulse until mixed. Mixture should foam up and get light- add more water if needed. Cook on a hot nonstick griddle.
The other one is my new favorite. I found the recipe from one of my favorite blogs

Wheat Free Protein Pancakes
  • 1/2 cup oats
  • 1/2 cup cottage cheese
  • 2 eggs or 4 egg whites
  • 1 tsp vanilla (Mexican Vanilla is our favorite)
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 TBL canola Oil or Coconut oil

Blend ingredients in a blender. Don’t over blend though. cook on a non stick griddle.

We really like these pancakes, but do have to double the batch for our family. My son is a carb junkie. All he ever wants for breakfast is cold cereal or pancakes, so I feel a whole lot better giving him these because there is really good stuff in them and he doesn’t know the difference!

Both these pancake recipes are VERY filling. One to two pancakes are enough for me.

To top the pancakes off I like to put a little water in a pan with frozen peaches, strawberries or blueberries and then add 2T agave to make a syrup. Heat on low with lid on until the fruit is warm and a bit mushy.

 
On the other pancakes we used my Sugar Free Freezer Jam and bananas, oh and a little bit of whip cream {can’t leave that out}!!

Try these out and let me know how you like them! And if you have any other healthy pancake recipes let me know, I would LOVE to try them!

For the rest of the week I am going to take a break from my blog. My brother gets married in 2 days and I have so much to do to help out. Yesterday I ironed tablecloths for 4 1/2 hours, My mother owes me big time! Today it is on to find grandma a dress to wear, finish the wedding video, make 150 Magleby’s Rolls, help set up a backyard for a reception, and hopefully find time to go running in this beautiful Utah weather!

    Have fun with all the family stuff– enjoy the cooler weather. When we were out running errand it was 93 and rising. Ahh!! My favorite pancakes right now are soaked oatmeal pancakes-very yummy.

    I can NOT beleive we haven’t put agave on our pancakes! We use it for toast, baking, yogurt, etc… but never on pancakes. I’m definitely doing that next time!

    Hi! Michele told me about your blog and I absolutely love it so far! We use agave on EVERYTHING! We are also hooked on pancakes and my daughter won’t eat hers without agave on them. Kind of random, but we own our own yogurt making business and we make yogurt from coconut milk and we sweeten it with agave instead of adding sugar. I have never tried the vanilla flavored agave, but I will be buying some the next time I am at the store!!!

    Okay, I know this is an old post, but I wanted to look more into agave, so I came back to look at this post. Anyway, lately we have been eating coaches oats multigrain pancakes (from costco). They are so good and have all sorts of good grains in them. You should try them!
