Kendra’s Chicken Veggie Tostadas

Last week a friend of mine who is Mexican invited me over for what she called “Chicken Salad”.  Thinking it was something more like this I thought…sounds great!  When I got there she had this bowl full of of chicken and veggies and you put it on tostadas.  All the food they have made for us has always been excellent, so I dug right in and so did my kids.  We loved it!  I asked for the recipe, but Mexicans, or at least my friend doesn’t ever use actual recipes {I couldn’t live with out them}, they just chop, dice, cook and add!  So I got the “ingredients” from her and then came home and made if for my husband a couple of days later and added some of my own little additions.  My husband and all my kids LOVED it!  I then made if for my big family on Sunday when we were on vacation and they loved it.  My family is going to call it “Kendra’s Chicken Vegetable Tostadas”  although half of it should be called “L’s chicken salad”  Here is the recipe I made and it was excellent!

Kendra’s Chicken Vegetable Tostadas
{Items in bold are what I added to the original recipe}
{Printable Version}

  • 3-5 chicken breast boiled with chopped onion and fresh garlic – once boiled, pull out chicken and shred it really good and small-I used my food processor {save the broth for chicken soup}

Mix together

  • 1  can Corn {She used fresh off the cob, I only had sweet kernel canned}
  • 1 Can Green Beans {She used fresh and boiled them until barely soft – I used canned once and fresh once and both tasted great}
  • 3-4 Carrots diced into cubes
  • 4 potatoes diced into cubes
  • Boil potatoes and carrots until just barely soft
  • 1-2 Cucumber diced up
  • 1 C Celery diced up
  • 3/4 cup Mayo
  • Salt and Pepper to taste

Mix together.  Put on top of Tostada
On the top sprinkle Feta or Mozzarella.  Squeeze lime over top and Enjoy!!!

  
 
Let me tell you why I love this meal so much… 
  1. It makes a ton and it makes a great leftover
  2. It is SUPER healthy!
  3. My son Cowboy does not like potatoes at all and he ate this {I didn’t tell him they were in there} and he LOVED it!
  4. It has TONS of veggies {that I normally have on hand}.
  5. It is fresh and yummy for summer.
  6. It does take a lot of prep, but it is well worth the time. 
I hope you believe me that this meal is DELICIOUS, and make then go make it, and then come back and tell me what you thought of it!!
