How many of you cook with Quinoa? Quinoa is a grain that has a lot of vital nutrients. It is is high in protein, amino acids, magnesium and iron, and a good source of fiber and calcium. I didn’t really know how to cook with quinoa until this last year. My sister gave me this recipe and I adapted it to our liking! A lot of people eat so differently now a days, this recipe is perfect for those that have problems with dairy or gluten or are looking for more vegetarian and vegan recipes. It is super quick and easy and a lot like my Quick and Easy Pasta Salad, but with quinoa instead of pasta!
Ingredients
1 Cup Quinoa
1 1/3 Cups water or broth
2 T butter or Oil
1 Can Corn
1 Avocado
1 jalapeno (optional)
1 clove garlic chopped
3 T Mayo
2 T lime Juice
1/4 cup Cilantro
1/4 C Feta crumbles (optional)
2 green onions sliced
1/2 t Chili powder
salt, pepper to taste
Optional additions-
1 1/2 Cups Black Beans (rinsed well)
1 cup diced tomato
1/2 Diced Red Onion
1 Cucumber Diced

Instructions
- Bring water and Quinoa to a boil, cover and reduce the heat and let simmer for about 15 minutes until quinoa is done and has absorbed all the water. Let sit for 5 mins covered.
- Melt Butter in a skillet on Medium heat and add corn toss it and let it sit until charred and mix it up and let it char again (about 10 minutes)
- Add corn to Quinoa and mix all other ingredients in.
- Serve warm or at room temperature.
I LOVE the charred corn! It gives it such a yummy flavor! This meal is great because it’s easy, healthy and tastes super yummy! Hope you like it!
