Peanut Butter Balls

I’m back! Seriously I felt like we were gone forever. We were up visiting family for Memorial day and also there to help out with my brothers wedding. I ironed tablecloths for five hours one day, did their wedding video, and made 148 “mock” Magelby’s Rolls {recipe to come}. I was tired, but it turned out wonderful. Now all five of us are married. Isn’t that cool!?! It was a beautiful wedding, and reception. The weather was AMAZING!! I miss living in Utah County, but only in the Summer. They had like a 9 month winter this last year, so I don’t really miss that! Look at this awesome picture of the sun that I took. It was on memorial day while we were at my Grandma’s grave. It is called a Sun Dog….
Anyway I am not here to write about Sun Dogs, although they are beautiful! So onto my post. Today I want to introduce to you Yummy Peanut Butter Balls. This summer I am making it a goal to not buy store bought treats. I am going to be starting a little cooking classes for my kids this week and thought it would be fun to make our treats from scratch. So no fruit snacks, no Nature Valley granola bars, no crackers, or chips. We’re going all homemade, fruit leather, graham crackers, pretzels, granola bars! I just feel like you can save so much money not buying store bought snacks. Are you thinking I’m crazy? I probably am, but I am excited to see if I can do it. My kids might not like me by the end of the summer, but oh well, they ate healthy!!!
 
Let me start off by telling you how I used to make these. When I was 12 I was looking through the Friend magazine and came across a delicious recipe for Peanut butter balls. {We called them Poop Ball cookies, isn’t that disgusting, but we thought we were pretty funny} I actually found the recipe on the LDS website….
 

 

Peanut Butter Balls

1 cup peanut butter

1 cup corn syrup

1 1/2 cups nonfat dry milk crystals

1 1/4 cups sifted powdered sugar

Mix all ingredients together. Roll into balls. and roll into powdered sugar. Makes 3 dozen.

Could it get any better than that? I don’t think so. They were delightful. I think I ate like 10 at a time. I think once we just made three huge balls and my brother and I split them 🙂 They were so good. After I grew up and had kids and realized how bad they were for us, my next door neighbor introduced me to a healthier option. I was a bit hesitant, but REALLY like them now. I have found a few different recipes since and like them all. Here are two that I have adapted to our liking!

Peanut Butter Balls with Oat Flour

1 3/4 cup oats blended into flour

1/2 Cup Honey

1/4 C Ground Flax seeds

1 C Natural Peanut Butter

Chocolate Chips, nuts, raisins (optional)

Mix well roll into bite size balls and Refrigerator

Peanut Butter Balls with Oats

{These ones are a bit more chewy, because you don’t grind the oats up}

1/2 C honey

2 C Oats

1/4 C Ground Flax seeds

1 C Natural Peanut Butter

Chocolate Chips, nuts

Mix well roll into bite size balls and refrigerate

Try them, I promise you will like them, don’t try the others ones because you will really like them, and probably gain 10 lbs eating them!!
