I love baking & cooking during the holiday season. One of my favorite things to do is try new, fun and delicious recipes. But sometimes during the holiday season life get pretty chaotic and I just need to have some down time. In the midst of chores and to-dos, I love to watch a good movie on Netflix. We don’t have cable and so every so often we order Netflix, especially during the holiday seasons. I LOVE watching Christmas movies! Last week I was able to Stream a movie on my computer, while cooking in the kitchen. Then the kids came in and wanted to watch a cartoon so they took over, but at least they were not whining for food, and running crazy through the house.
With this in mind, Netflix partnered with celebrity chef Curtis Stone to create custom holiday recipes, all of which make the perfect pair to your favorite shows and movies available on Netflix. One thing I miss about cable is not being able to watch cooking shows. With Netflix I can!!
Here are a few things I LOVE about Netflix…
- Netflix let’s members enjoy their favorite TV shows and movies anytime and anywhere they want.
- With Netflix you can watch your favorite shows on an iPad in the kitchen, the big screen in the living room, or even on your phone while waiting in line at the grocery store. {although I am anti stuff on my phone, I don’t care if other people do this, my kids just fight over it!}
- And Last, Netflix is also making it easier to bring the family together this Thanksgiving by suggesting TV shows and movies you can watch while the turkey is baking.
Last week I just whipped up (cuz that is just what I do in the kitchen 🙂 this yummy Potato Cauliflower Gratin inspired by celebrity chef Curtis Stone. It tasted SO good!
Potato, Cauliflower, and Camembert Gratin
(Curtis Stone’s Recipe)
Serves: 8
Prep Time: 15 minutes
Cooking Time: 1 1/2 hours, plus 10 to 20 minutes
Make-Ahead: The cauliflower-cream mixture can be made up to 1 day ahead, cooled,
covered, and refrigerated; reheat over low heat before assembling the gratin.
Ingredients
2 tablespoons unsalted butter, plus more for the baking dish
1 yellow onion, thinly sliced
3 garlic cloves, finely chopped
4 large sprigs fresh thyme
2 cups finely chopped cauliflower
2 cups heavy cream
2 cups whole milk
4 ounces Camembert cheese, with rind, cut into large pieces
Kosher salt and freshly ground black pepper
2 3/4 pounds baking potatoes, such as russets, peeled and sliced into 1/8-inch-thick slices
Method – Preheat the oven to 325°F. Lightly butter a 3-quart shallow baking dish.
- Heat a large pot over medium heat. Add the butter and stir until melted. Add the onions, garlic, and thyme and sauté for about 5 minutes, or until the onions are tender but have not taken on any color.
- Add the cauliflower and cook for about 6 minutes, stirring often, or until softened. Add the cream and milk and bring to a simmer.
- Add the cheese and stir until it melts, then remove from the heat and discard the thyme stems.
- Slice the potatoes.
- Working in batches, puree the mixture in a blender; return to the pot. Season generously to taste with salt and pepper.
- Stir the potato slices into the hot cream mixture to coat. Spoon 1 cup of the cream mixture into the baking dish. Spread the potatoes and the remaining cream mixture evenly in the dish. Cover with aluminum foil and put on a rimmed baking sheet.
- Bake for about 1 hour, or until a knife can be inserted easily into the potatoes. Uncover the dish, raise the oven temperature to 400°F, and continue baking for about 10 minutes, or until golden brown on top. Remove from the oven and let stand for 10 to 20 minutes.
I would have never bought Camembert Cheese because I didn’t know what it was, but now I will because this is divine!! All thanks to Netflix LOL
I love to stay busy, but with my husband working late, I love to have a show going to keep me company My sister just told me about some fun series I am excited to watch…Call the Midwife, Psych, Foyle’s War, Monk, North and South! But I am also excited to watch any Christmas Movie or kids movie to keep my kids entertained while I am trying to get stuff done in the evenings!!!
