A few year ago my grandma came to visit me and I had boiled some chicken for dinner. As I went to throw the water down the drain she stopped me and told me she was going to make Chicken Noodle Soup out of the left over liquid. She made it and it was so YUMMY. You can tell I like what my grandma cooks because I am always sharing her recipes. (which by the way, last night she made us Moussaka…totally going to share this recipe with you later!)
Chicken Noodle Soup with Dumplings
Boil 3 chicken breast (keep the water, pull out the chicken and shred chicken)
add 2 cubes of bullion, garlic, Dried Oregano to taste to the water.
Dice up Celery, Onion, and Carrots (depening on how much you want about about 1-2 cups
Fry them in the bottom of a pan with butter or Olive Oil
add 2-3 cans of Cream of Chicken soup to the Water
Add 1 cup of noodles, I use broken up pieces of Lasagna noodles {about 4 of them}
Add veggies to the water and bring to a boil and then simmer until veggies are cooked
Add chicken.
Salt, Pepper to taste
Make Dumplings
2 C flour
4 t. baking powder
1 t. salt
4 T. Butter soft
1 Cup Milk
Mix together. I use a spoon, and then with clean hands mix it better to form a big ball. Drop 1T full into soup on Med/Low heat. They take about 20 mins. You might need to push them down a little.
Dumplings are our favorite. My husband is a happy man when I make the dumplings with the soup!!
