Snickerdodles

I have basically been the biggest pig during this pregnancy.  I don’t eat bad, but I snack A LOT!  I have my sweet tooth totally back and wish it was gone.  I really don’t have anything in my house but Herbal T, Graham Crackers and Chocolate Chips.  So yeah that is what I snack on.  If I go to the store somehow I find myself pulling out a pint of Dulce De Leche Haagen Dazs Ice Cream, and coming home and eating the whole thing up all on my own.  Thank goodness I only make it to that store a couple of times a month. 

I talked to a lady this last week that has been off refined sugar for 6 years.  I was impressed and started to think I wanted to do the same, but then I realized there are two many things I love to go completely off refined sugar.  But I also know how crappy it makes me feel after I eat it that I probably should be like her and go completely off it.  So I decided to compromise.  I would only snack during the week on healthy snacks, like Homemade Granola or Fruits and Veggies.  Then on the weekends, unless a special occasion I will make a sweet made with Maple Syrup, Honey or Steviva.  And then on special occasions like Holiday, Girls Night Outs {that counts right?}, Birthdays or Anniversaries.   I will make my most favorite seasonal sugary treat, or buy it on the night out!  Let’s see if I can do this.  I sure hope so.  I know I will feel much better, than pigging out on the Oreos at my presidency meeting.  It’s just not worth it. 

Yesterday my husband informed me that he was in charge of the treats for Pack Meeting.  I felt grumpy because I didn’t want to make anything, but I also didn’t want to spend money.  So I found a Snickerdoodle recipe and adapted it so that my husband could take the sugary ones to scouts and I made some extra for me made out of WW flour and Steviva.  Don’t tell the scouts but there’s were made out of WW flour also! :) 

They turned out REALLY yummy!

Here is my adapted recipe for healthy{er} eating!

Snickerdoodles

{These cookies are so fast and easy to make, and they taste great!}

  • 3/4 Cups Steviva or Agave or Honey
  • 1 cup Butter {I like this because most of these recipes call for shortening}
  • 1 egg
  • 1 egg white
  • 1 1/2 cups Whole Wheat Flour
  • 1 1/4 cups all-purpose Flour
  • 1 t baking soda
  • 1/4 t salt
  • 1 T Steviva
  • 1 1/2 T Cinnamon
In mixing bowl cream together sugar and butter, add egg.  Mix dry ingredients together and then add to creamed mixture.
Roll in small ball and roll in Steviva Cinnamon mixture
Bake at 400 degrees for 8 mins.  Cool immediately on wire racks!
