Honey Caramel Popcorn

We love caramel popcorn.  I thought I would try my hand at a healthier version where it didn’t call for corn syrup and a ton of sugar.  This one is super yummy and has the perfect crunch.  I guess you could eat it without baking it to have it be gooey, but it is pretty sticky with the honey!  We make it when my kids have friends over because it isn’t too sticky, but they love it!

Honey Caramel Popcorn
{Printable Version}

6 T Butter
1/2 Cup Honey
1/2 Brown Sugar or Sucanat
1 T water
1/4 t Salt (sea salt)

Melt butter and all other ingredients.  Bring to boil for 1 minute.

Spread on a cookies sheet with parchment paper (or sprayed with oil) and bake on 350º for 10 mins.  Stir at five minutes!
