These Naturally Colored Green Eggs have become one of my go to meals when I am in a hurry to make dinner! A couple of years ago my friends were wanting to make green eggs for Dr. Seuss week. We were chatting one day and one friend said she used food coloring, and then my other friend said she just threw a whole bunch of spinach in the blender and ran the blender so that you couldn’t even tell there was spinach in it. Her kids couldn’t even taste a difference. I love sneaking spinach in stuff so after hearing that, I decided that was how I would make all my scrambed eggs from now on! I do have to say, my pickiest eater boys LOVE them, and can’t tell that there is spinach in it. My daughter says she can tell, and says it’s not her favorite (she’s funny when it comes to green stuff).
I thought this would be a perfect recipe to share with you for St. Patricks day!
Naturally Colored Green Eggs
These are super simple and easy to make. All you need is Eggs, Milk, Spinach, Cheese, Salt and Pepper, and a blender!
Mix a dozen eggs, two big handfuls of spinach, and one cup milk in your blender. I LOVE my Blendtec because it blends it so well. I can’t even see any spinach leaves in it! The color will look almost neon green!
Next add a little butter to a pan, or a lot, what ever you like, and pour your egg mixture in the pan. Put the temperature on Med/High and stir constantly.
It might look like it will never work. It takes longer than regular scrambled eggs, but it does start to stick together and actually become Scrambled eggs!

These are my new favorite tortilla from Costco. The are Half Corn / Half Wheat and fast really yummy! You just heat them up a little bit on a pan and they are delicious!
You can eat these eggs plain, but I like to wrap them in one of these babies and put fresh salsa on top! I ran out of salsa for they picture so I cut up a fresh tomato to go on the side!
- 12 Eggs
- 1 cup of milk
- 2 cups (or handfuls) of Spinach
- 1 Cup Cheese
- Salt and Pepper
- Salsa (optional)
- Tortillas
- Crack eggs into blender. Add one cup milk and 2 cups or 2 handfuls of spinach.
- Pour in buttered pan on med/high and stir.
- Add salt and pepper to taste.
- Once cooked eat plain or place in tortilla and top with cheese and salsa.
