Last month was Peach Days where I live, and as promised to my husband I did not enter a recipe, but I think I have a problem. Every August my brain can’t stop thinking about yummy peach desserts. Remember my amazingly delicious Peach Grenades? (I’m making those tonight) Anyway, when those months come around each year my brain starts reeling thinking about something new I could make. I am loving all the fun kinds of cupcakes out there so I decided to make cupcakes with peach frosting and peach puree on the inside of the cupcake. They turned out heavenly!!
Start out by making your own cupcakes from scratch or a box mix. I chose a yellow box mix. Make the cupcakes and set aside to cool.
In your blender blend together (depending on how many cupcakes you are making) either 1-2 can of Peaches (minus the juice) or 2-4 fresh peaches with 1/4 cup of sugar.
Save a 1/4-1/2 cup out for icing and put the rest of the peach puree into a decorator bag.
When cupcakes are cool poke the tip of the decorator bag full of peach puree into the cupcake and squeeze until you feel the cupcake start swelling. A little might come out of the top, but it isn’t a big deal because they will be covered with icing.
Then make our frosting…
Just Peachy Buttercream Icing:
- 1 cup solid vegetable shortening
- 1 Teaspoon Vanilla Extract
- 4 cups sifted confectioners’ sugar (approximately 1 lb.)
- 1/4 – 1/2 cup Peach Puree
In a large bowl, cream shortening and Peach Puree with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. (I used about a 1/2 c more sugar because the puree made it a little more runny!) You can use butter in this recipe, but the icing doesn’t set up as well. I keep bowl covered with a damp cloth until ready to use. I also put it in the fridge to set up a little better.
