I had every intention this fall to make a Pumpkin Soup using a real pumpkin and then using the hallowed out pumpkin as the bowl to serve the soup in. It didn’t happen, but I did find a delicious pumpkin soup recipe on AllRecipes.com and adapted it to our liking! The recipe originally called for toping the soup with bacon. When I made the soup we didn’t have any bacon. My husband LOVES Maple flavored sausage so we tired it and it was excellent with the creamy pumpkin! I know, it sounds weird, but it is the special ingredient in this delicious pumpkin soup!
The recipe is very simple and easy to make. It does call for a lot of spices, butas far as chopping and cutting stuff up it is so easy!
Homemade Pumpkin Soup With Maple Sausage
Ingredients:
- 3 cups Chicken Broth (Use broth or 3 bullion cubes and 3 cups water)
- 1/2 t. Salt
- 1 29 ox Can Pumpkin Puree
- 1 small onion chopped
- 1/2 t. Thyme
- 1 Clove Garlic, minced
- 1/2 t. Black Pepper
- 1/2 t. Ground Cinnamon
- 1/8 T. Pumpkin Pie Spice
- 1 Cup Heavy Whipping Cream
- 1 Lb Maple Sausage
- Fresh Parmesan Cheese
Directions:
In a large pan fry up the pound of Sausage, rinse and set aside.
Combine all ingredients 1-9 in a large pot. Bring to boil and then simmer on low for 30 minutes.
Once simmered using a blender puree the soup in small batches. about a cup or two at a time.
Return soup to pot and bring to a boil for 20 minutes.
Add cream and sausage after you have removed it from the heat.
Top with Parmesan

I never had a recipe so I’m definitely going to try this especially since it says can of it. 🙂 Throwing in the sausage sounds like a great touch.
