School has started and life is SO busy! I was telling my husband how grateful I am for modern conveniences and quick meals. I don’t think I could homeschool my children and cook all three meals if we didn’t have all the modern conveniences we do today. Mothers used to spend all day cleaning and cooking. Going from one chore to the next. While there are times I would love to do it all from scratch, our lives our too busy in this day and age I am very grateful for things we can buy in the store to help us do things a little faster! Last night I made delicious Cheesy Albacore Tuna cakes and it only took me 15 minutes to put it all together.
Cheesy Albacore Tuna Cakes
Ingredients
- 2 Cans Bumble Bee® Solid White Albacore Tuna
- 1 package stuffing mix
- 1 1/2 cup Shredded Cheese
- 3/4 cup shredded carrots
- 1/3 cup Mayo
- 2 T Pickled Relish
- 1/2 Water

- Cheesy Albacore Tuna Cakes
- 2 Cans Bumble Bee® Solid White Albacore Tuna
- 1 package stuffing mix
- 1 1/2 cup Shredded Cheese
- 3/4 cup shredded carrots
- 1/3 cup Mayo
- 2 T Pickled Relish
- 1/2 Water
- Mix all ingredients together in bowl.
- Cover and set in refrigerator for at least 15 mins. (This process is actually really important. It helps the mix soak together and makes it easier to become a patty.)
- Scoop out about 3/4 cup of mixture, and roll it into a ball and smash it flat.
- Fry it in a pan with olive oil! Make sure to adjust the temperature so they don't burn.
- Smash them down with a pancake turner and flip when they start to brown on one side.
- They are done when both sides are browned.
