Chia Seed Pudding

One of my new favorite healthy treats to make is Chia Seed Pudding.  There are so many yummy ways to make it, and so many things you can add to it!

This week, May 10-May 16, is National Food Allergy Awareness Week.  How many of your kids suffer with food allergies?  There are so many people these days that struggle with all sorts of foods allergies.  Most of which are milk, eggs, fish, shellfish, tree nuts, peanuts, wheat and soybean. I hadn’t really heard very much about food allergies until my sister and I had babies at the same time and her son ended up being allergic to nuts and milk.  It was not any easy thing for her and took some big adjustments for the whole family.  A few years ago I realized that milk had a big affect on my son.  When he would have a lot of milk his stomach would hurt really bad.  I wouldn’t say he is allergic to milk, but it does affect him.  

A few months ago my husband had made a smoothie with chia seeds in it and left it in the fridge overnight, by morning it was super thick and almost like pudding.  I had this idea, which I think everyone else had also (because I have seen a bunch of recipes for it after I thought about it), to mix Chia Seeds with different kinds of milk, let it soak in the fridge over night and eat it as pudding in the morning for breakfast.  The awesome thing about this Chia Seed Pudding recipe is you can use ANY kind ofmilk.  For this post I tried the pudding with a bunch of different milk.  I used Coconut Milk, Coconut Almond Milk, Dark Chocolate Almond Milk, Regular Milk and a delicious French Vanilla Coconut Milk Creamer! I love that there are so many milk options these days. You could for sure also make this with rice or soy milk. Chia Seed Pudding & Blendtec Giveaway

Chia Seed Pudding (Made with Any Milk)

This is the most simple recipe in the world.  I just added a banana to 2 cups of milk. Some of these milks are already sweet enough, but if you need more sweetness I recommend adding maple syrup or even stevia.  Blend the milk and banana in your blender, once that is mixed well, pulse in a 1/4 c chia.  Pour in a container with a lid and let sit in fridge for about 2 hours. Stir and then let sit overnight.

When it is done it will be thick and yummy.  It’s not as thick as real pudding, but it is thick, and is perfect to mix in with delicious fruit on top.  My favorite pudding was the coconut milk creamer, which was much more like a dessert.  If I were to have this for breakfast I would just use an unsweetened milk and add the maple syrup!

These have been perfect for the last week for a little treat or for breakfast.  I just cut up fruit to add to it and have a delicious and healthy treat! Some milks do not thicken as well as others, but they are all delicious with fruit mixed in. This Chia Seed Pudding is aA perfect healthy treat for any family with any kind of allergy!

Ingredients
  1. 2 Cups Milk (Any Milk- Coconut, Almond, Rice, Soy or regular)
  2. 1 Banana
  3. 1 T Maple Syrup (optional)
  4. 1/4 C Chia Seeds
Instructions
  1. Pour 2 cups milk and the banana, and sweetener in the blender and mix until there are no chunks. Add Chia Seeds and pulse until they are mixed through out. Do not over mix. Pour in a container with a lid and let sit in fridge for about 2 hours. Stir and then let sit overnight.
Notes
  1. Some milks do not thicken as well as others, but they are all delicious with fruit mixed in. A perfect healthy treat for any family with any kind of allergy!

    No food allergies here thankfully! I think I would make my own almond milk if I had a Blendtec, then use the milk to make the chia seed pudding!

    Ooooh, sounds like a great recipe! I will have to try it for sure! It’s nice to have a little snack that’s cheap and easy to make and healthy. Thanks for sharing! We have a milk sensitive allergy as well, so I will probably use Coconut milk or Almond milk. YUMM!

    This looks great! I’ve never seen French Vanilla Coconut Milk, but I will have to keep my eyes open because it sounds tasty. My kids love to eat pudding and this seems like it would be tasty and healthy. Thanks for sharing!

    My daughter is lactose intolerant, all these recipes look great, but I will try the raspberry Gelato first as she loves ice cream.

    I am lactose intolerant, but can get away with some diary. I would be very excited to make smoothies. I try to have a smoothie every morning, and I would love to have something to blend it. I really like chia, so the pudding recipe would be really fun to try.

    I am vegan, gluten free, soy free. I have many many intolerances..dairy, apples, flax seeds, this list could go on lol. This blend tec would mean the world to me <3

    Luckily, we don’t have any food allergies in the family. I’d most likely make pineapple and cucumber smoothies the first time I tried this.

    I do not have any food allergies. My kids love chocolate almond milk, peanut butter, banana smoothies and that is what I would make first.

    I stopped eating dairy for a while, then I went back to it and can’t drink milk or eat ice cream, but for some reason I can drink organic milk :/ . I would make a berry chia kale smoothie.

      My son is the same way! I like the excuse to get to buy organic. I can’t afford everything organic, but I do love organic milk!

    This sounds delicious. I will have to make this recipe. I noticed you have the carton coconut milk. Is there a difference between the canned and carton coconut milk? Some recipes I have seen on Pinterest say not to use the carton coconut milk, but you have it in your recipes. What’s the difference?

      I’m not sure about the canned or the carton. I just bought mine cold in the milk section.
