Pesto Spaghetti Squash

This eating plan is kickin my booty, but I must say I feel so good, and am doing a lot better this second week than the first!  I am on day 9 and haven’t slipped once!  I also can already tell I am losing weight.  The hardest thing for me this time around is the snack food I am surrounded by.  I only buy two snacks for my kids, Motts Fruit Snacks and those Organic Animal Crackers from Costco, and having those around has been the hardest thing for me.  I also really miss Peanut Butter sandwiches!  Anyway, onto the purpose of this post…

I have tried to be a little more creative this time around with my meals.  On Thursday, I was making Pesto Pasta for my family for dinner and I decided to try it with Spaghetti Squash for me!  It turned out so good!! So I thought I would share with you how I made it!

Pesto Spaghetti Squash
1 Spaghetti Squash – about 1 1/2 cups
1-2 T of Pesto {Here is a link to my homemade Pesto}
4 oz of Chicken

Cut the spaghetti squash in half, scoop out the insides and place face down in microwave safe baking pan with a half inch of water.  Cook in microwave on high for 12 minutes.  Scoop out insides.

Mix in 1-2 T Pesto {I used this as my fats and Salad dressing for dinner since it has a lot of Olive Oil in it}

Add chopped chicken.  You could also top with fresh cherry tomatoes, but I didn’t have any.
My kids even tried it and liked it!  Let me know how you like it!

    I do think your plan is really a good one. I am staying with some grandchildren who already eat basically like this; so hopefully this won’t be hard to follow. There really aren’t many treats around until Halloween. Thanks for sharing this recipe and way to go for week two.
