Quick and Easy Pasta Salad

February 13, 2013 by The Things I Love Most

Speaking of Pasta and us eating it a lot lately.  Here is my favorite go to recipe that I love and my kids even like.  It is loaded with good veggies and you can easily add more!
Quick and Easy Pasta Salad
(Printable Version)
  • 1 Box of Whole Wheat Pasta (any kind…Rotini, Penne, Bowtie or Macaroni)
  • 1-2 Carrots shredded
  • 2 sliced Tomatoes
  • 1 Cucumber diced
  • 1-2 stalks of Celery
  • 1 1/2 cups chopped fresh Spinach
  • 1 can of Chicken or 2 cut up chicken breasts
  • 1/2 cup (or More) Feta
  • 1 cup Salad Dressing (ranch style)
Cook and drain pasta as directed on box.  Add veggies, feta and dressing.  Mix until all noodles are coated with dressing.  You can serve warm, but I like it cold.  Either way it is really good!
