Chocolate Covered Rice Crispy Hershey Kisses – Happy Valentines Day

I love Valentines day.  Now that we have kids it has become more of a family holiday to write sweet notes to each other and make treats for our neighbors.  Maybe one day when my kids get older my husband and I will go out to dinner or something, but for right now we give our kids each a special little gift and note and then have a yummy homemade dinner.  This year is Chicken Alfredo and Salad and Jell-O {in the shape of a heart}.  Some people don’t like Valentines day and say that we should show our spouse we love them all year long, I agree!  My husband does a pretty good job of that during the year so Valentines day for us is just a little extra, and I like that! 

I love helping my kids prepare all their valentines for their friends.  With my son being in public school Kindergarten this year he had a whole bunch put together.  My daughter made eight for her closest friends.  This year might be a little more difficult because my son is going to come home from school with a huge lot of valentines from friends and my 2nd grader, Lala, won’t.  Last year it wasn’t a big deal because she didn’t have anyone to compare to.  I have talked to her a little bit about it, but I just hope she isn’t sad when the day finally comes.  I have plans to make cookies with her in the morning and play a couple of fun valentines games. 
This is what my husband is getting from me this year…but about 8 of them.  And another great movie!

I secretly also made one for each of my kids! {don’t tell}

Here is how to make them…

Chocolate Covered Rice Crispy Hershey Kisses
Melt 1 bag of Large Marshmallows and 6 Tbsp. Butter in the microwave in 30 second intervals until melted.  Add 1 tsp. Vanilla and 6-7 cups of Rice Crispies, Stir together until all is coated.
Once cooled down a bit fill the funnel and turn it on to a wax paper or non stick surface.  I used a small funnel, but I think it would have been cool to make all different size funnels.
Put the Rice Crispies in the freezer for 5 mins to harden a little so they will stay together when you do the chocolate.

Melt Almond Bark in a glass bowl for 30 Second intervals until smooth.
Dip the Rice Crispy in the chocolate and put back on pan.

Place in the Freezer for 5 mins until hard.

Print out some cute sayings or sweet love notes to stick in each Hershey Kiss.
