Persimmon Cookies

I had a funny experience yesterday, my neighbor came over to my house at the perfect time.  My house was clean, The kids just finished eating lunch and were looking at books, and the baby was going down for a nap, and I was making cookies!  I always have an hour break from 12-1 for lunch and prep for dinner, but instead I decided to make cookies.  {they’re better anyway than dinner…right!?!}
We actually clean up the house and put all the homeschool stuff away for that hour.  Then I pull out the Math and Phonics bins and we do that in the afternoon while Jack Jack is sleeping.  My neighbor {who has homeschooled in the past} walked in my house and said, “Wow, your house is so clean! How do you do it?  Homeschool and keep your house clean, and make cookies?”  I just looked at her and laughed.  And said, “You caught me on a good day,  Probably the best day of my homeschooling career!! My two year old had been at a friends all morning, and so we got a lot done and cleaned the house up after the two hours we did school.” 
Then today my friend was telling me at the gym that I must have a lot of patience. 
I can assure you I do not have patience everyday {today being one of them, I totally was yelling at my kids to get their jobs done, and crying to my husband telling him how tired I was}  I can also assure you that my house looks like a disaster while school is going on.  But I also can say that God has blessed me with more patience, and helpful kids, that help me clean as we go. 
I will tell you something I have a lot of and that is Persimmon!  image Yup that’s it, just a bunch of this weird fruit I got from Bountiful Baskets last week ! I had no clue what to do with it so I looked up a recipe on All Recipes and adapted it to my liking!!  I have actually never had persimmon and was excited to try them. 
I guess they are kind of the overlooked fruit that originated in China with lots of health benefits.
They taste pretty good plain, but I decided to try using them in a recipe! And I chose these cookies! Persimmons look like a tomato and are actually a fruit…Oh wait so are tomatoes :)!  I cut the green top off, quartered them,  and then used my mini food processor to puree them.

Persimmon Cookies

Ingredients
  • 2 ripe persimmons, pureed
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour  {I used Whole Wheat}
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup white sugar  or 1/2 cup of Steviva {which is what I used}
  • 1/2 cup butter
  • Add nuts, raisins, or Butterscotch or Chocolate chips!
Directions
  1. Preheat oven to 350 degrees F (180 degrees C).
  2. Dissolve baking soda in persimmon pulp and set aside.
  3. Sift flour, spices and salt together, set aside.
  4. Cream together butter or margarine and sugar until fluffy, beat in egg and persimmon. Stir in dry ingredients. Stir in nuts and raisins.
Drop by teaspoonfuls onto greased cookie sheet. Bake for 15 minutes.   F1145 005

  They ended up tasting really good!  My husband asked me to make a batch with Chocolate chips in them and he really liked them.  Like really….ate 10 cookies in about 5 mins!  It’s not fair it does nothing to him to do that!  Anyway they tasted really good so go try them if you ever find persimmon!
