I have to be honest with you. St. Patrick’s Day hasn’t always been my thing. In fact, I really didn’t care too much about the holiday until my little guy was born on St. Patricks day 2013! It was a Sunday, I was overdue, wishing this baby would just come out already! I was scrambling around the house trying to get ready for church, praying that this baby would come ASAP. I felt miserable and huge, my body hurt and I was just plain done being pregnant! Well Lucky For Me, on my way out the door to church this little man decided he wanted to come out NOW! We rushed to the hospital and he was born 2 hours later. Oh man I love that munch little guy!
Last year on his birthday I decided to St. Patrick’s day it up as much as I could because I figure as he gets older he will probably get sick of all the green stuff. Right now he doesn’t care and the kids were excited his birthday already had an automatic theme, so we just went with it. My kids are all about Birthday themes, even my birthday has to have a theme!
I love making my kids birthday’s special so every other year I make them a special cake! This year I decided to do a shamrock cake! It was SO easy. I just used a yellow cake mix and made two 9″ rounds and then used a shamrock shape to be my guide to cut it out! I put one cake on the cake stand, put frosting on top and then put the other cake on top of that. Don’t worry about cracking because you can always fill it in with frosting.
Here is my frosting recipe that I use. It always works great and is easy to decorate with. I usually double it so that I for sure have enough to frost the cake with. It’s the worst when you run out of frosting in the middle of frosting the cake.
Wilton Butter Cream Frosting

1/2 cup solid vegetable shortening
-
1/2 cup butter
-
1 teaspoon vanilla extract
-
4 cups sifted confectioners’ sugar (approximately 1 lb.)
-
2 tablespoons milk
Mix together and add food coloring.
I outlined the edge of the cake in a dark green and did the center a lighter green. I loved the look of it. I used a star tip to frost it with. It was super easy and fun to make! Honestly anyone can make this cake!
I love how it turned out! The kids were so excited that mom was actually doing something St. Patrick’s day(ish) because I usually don’t make a big deal out of the holiday! I think it will be different from now how. It was pretty fun, and the kids were happy!
And the little man LOVED it! He hadn’t had any sugar up to this point so he was on a crazy sugar overload!
Here is a template that I used for the cake. I recommend printing it as close to the edge of the paper as possible so you can get the most out of your cake!

What a darling cake and an even more darling kiddo! My sister’s birthday is on St. Patrick’s Day also. Growing up we always loved having a corned beef, cabbage and soda bread dinner to celebrate her big day!

I’ll admit I’m not too into St. Patrick’s Day. I make sure everyone has a clean green shirt, and that’s about it. But that cake looks like it would be fun to try! Yum!
