Quick and Easy Tuna Cakes

February 11, 2014 by The Things I Love Most

Do you like Tuna?
My daughter, my husband and I are the only ones around here that will eat Tuna Fish sandwiches, but if I make Tuna Cakes, everyone will eat them!
This is such a simple and easy recipe and very quick to make on one of those nights you start dinner late.  And I really think you kids will like it!
Quick and Easy Tuna Cakes
(printable version here)

  • 2 Cans of Tuna drained and flaked
  • 1 package stuffing mix (chicken flavored)
  • 1 cup shredded cheese
  • 1/2 cup carrots
  • 1.3 cup Mayo
  • 2 T pickled Relish

Mix all ingredients together.
Set in refrigerator for 15 mins. This process is actually really important.
It helps the mix soak together and makes it easier to become a patty.
Scoop out about 3/4 cup of mixture, and roll it into a ball and smash it flat.
We cook ours on a griddle at 350 with very little cooking spray.
I have also heard of people frying them in a pan with coconut oil which would be really yummy!
Smash them down with a pancake turner and flip when they start to brown on one side.
They are done when both sides are browned.
We love dipping ours in BBQ sauce or my Homemade Salad Dressing!
These are super delish!  My kids eat them right up and my husband could eat 10 of them!
I found another recipe that doesn’t call for stuffing  here and am excited to try it!
Tuna is really good for you and a great source of protein.  How do you like to eat tuna?

Wow those really are quick and easy! I wonder if I could use canned chicken and do the same. I never thought about adding the stuffing but that makes perfect sense to hold it all together and give it some great flavor. Thanks for sharing this. Emailing to my sisters and kids now. 🙂
