Any Ice Cream Cheesecake

I turned 31 last month!  I seriously can’t believe I am in my 30’s!  I remember thinking that when my parents turned 40 they were old (sorry mom and dad), but now I am only 9 years away!  Let’s just not think about it…OK!   My birthday was on Easter Sunday this year so we kind of celebrated the day before with a little more celebration on Easter!  This was what I chose for dessert!  Along with any kind of pie, this is my favorite!  

When I was little my grandma would make a dessert like this on Sundays.  I remember going into her house and getting so excited if this was in the freezer!!  The kind she would make had raw eggs in it and eventually she stopped making it for that reason….so we wouldn’t all get sick!
When I was in college my mom and I came up with something like it that is WAY easier to put together and tastes almost just as good!  I call it Ice Cream Cheese cake!
My grandma’s was made with heavy cream and cream cheese and other stuff, so changed some stuff and came up with this…
Any Ice Cream Cheesecake
{printable version}
Crust
1 1/2 package Graham Crackers crushed (I do it in my blender)
5 T butter melted
Mix together and put on the bottom of a 9X13 pan.
1/2 gallon of your favorite ice cream (softened)
1 8 oz cream cheese(softened)
1 t vanilla
1 8 oz Carton Whipped Topping (softened)
Whip the cream cheese, vanilla and whipped topping together until smooth.  Whip the ice cream into the cream cheese whipped topping mixture.  Pour onto crust.   Freeze for 3 hours.  
My favorite ice cream is just a really good vanilla, but I have tried this recipe with all kinds of ice cream and it tastes really good!  For this one I made my yummy strawberry sauce, but if I did Oreo ice cream I would sprinkle Oreos on top, or caramel, or another fruit topping just depending on the ice cream.  Here is when I made it at Christmas time with Peppermint Ice cream.
