Healthy Peanut Butter Balls – Snack Week

Let me start off by telling you how I used to make these. When I was 12 I was looking through the Friend magazine and came across a delicious recipe for Peanut butter balls. {We called them Poop Ball cookies, isn’t that disgusting, but we thought we were pretty funny} I actually found the recipe on the LDS website….

Peanut Butter Balls (Unhealthy Version)

{Printable Version}

1 cup peanut butter

1 cup corn syrup

1 1/2 cups nonfat dry milk crystals

1 1/4 cups sifted powdered sugar

Mix all ingredients together. Roll into balls. and roll into powdered sugar. Makes 3 dozen.

Could it get any better than that? I don’t think so. They were delightful. I think I ate like 10 at a time. I think once we just made three huge balls and my brother and I split them 🙂 They were so good. After I grew up and had kids and realized how bad they were for us, my next door neighbor introduced me to a healthier option. I was a bit hesitant, but REALLY like them now. I have found a few different recipes since and like them all. Here are two that I have adapted to our liking!
Peanut Butter Balls with Oat Flour
{Printable Version}
1 3/4 cup oats blended into flour
1/2 Cup Honey
1/4 C Ground Flax seeds
1 C Natural Peanut Butter
Chocolate Chips, nuts, raisins, chia seeds (What ever you want)
Mix well roll into bite size balls and Refrigerator
Peanut Butter Balls with Oats

{These ones are a bit more chewy, because you don’t grind the oats up}

1/2 C honey
2 C Oats
1/4 C Ground Flax seeds
1 C Natural Peanut Butter
Chocolate Chips, nuts
Mix well roll into bite size balls and Refrigerator
Try them, I promise you will like them, don’t try the others ones because you will really like them, and probably gain 10 lbs eating them!!

    Thanks for the recipes especially the unhealthy one. That will be the one my husband wants. I find it interesting that everything that tastes really good usually isn’t healthy.

    I really liked these healthier peanut butter balls at the Bike Shop Cafe downtown St. Charles and am researching different recipes to hopefully come close to that one. Although it’s not exactly it, the healthy one with the oat flour comes close. I added Rice Krispies to give it the airy crunch that they had. SO GOOD! Especially after a long hot bike ride.
