7 Layer Bean Dip Casserole

I am a huge lover of bean dip (minus the olives)  I could eat 7 layer bean dip daily!  My husband and I were talking about how bean dip isn’t dinner (he likes it, but thinks it’s only good as a side)  I kind of don’t agree, but decided to come up with my version of 7 layer bean dip for dinner!  I call it a 7 Layer Bean Dip Casserole!  It turned out amazing.  My husband kept making comments during dinner like, “wow”, “Yum”, “Mmmm” and my daughter said it was better than a certain restaurant that we all love!!  You know you made a good meal if you hear all of that!  Amazingly Delicious 7 Layer Bean Dip Casserole

Before I share the recipe, let’s talk beans for a minute.  I don’t make my own beans ever. I always buy canned. My family doesn’t eat enough beans for it to be worth the time and effort that goes into making them. When I only do about one bean meal a week, it’s just not worth it, plus I love all the different varieties of beans you can buy and I don’t have to think about making them. We all need a time saver, right?.  No one does beans better than my favorite brand S&W Beans.  They always taste so good and look great! I also love that added flavors they add to some of their beans.  They are high quality and have been around for a over 120 years.  They also have options of less sodium and organic beans.  For this recipe I used the Chili Beans (which have pinto beans, garlic, onion, zesty tomato sauce and chili peppers) and a can of plain pinto beans.  

7 Layer Bean Dip Casserole

This receipe, like I said tastes amazing and is so easy to make.  I used my Pressure Cooker to cook the chicken and my rice cooker to cook the rice! then I just cut up or dumped everthing in a bowl.  

7 Layer Bean Dip Casserole

  • 3 Cups Cooked Rice 
  • Taco Seasoning
  • 2 Cups Shredded Chicken
  • 2 Cans S&W Pinto and Chili Beans
  • 2 Cups Cheese
  • 1 Cup Diced Tomatos
  • 1 Can Olives
  • 2 Avacados Mashed with Garlic and Salt added
  • 1 Cup Sour Cream (optional)

7 Layer Bean Dip Casserole

Layer the Rice, Beans, Chicken in a baking pan.  Sprinkle with Taco Seasoning. Top with Cheese and Bake on 350º for 10 mins or until Cheese is melted and rice is warm.

Ingredients
