Today I want to introduce to you one of my kids favorite snacks….Peanut Butter Balls.
Let me start off by telling you how I used to make these. When I was 12 I was looking through the Friend magazine and came across a delicious recipe for Peanut Butter Balls. {We called them Poop Ball cookies,. Isn’t that disgusting, but we thought we were pretty funny} I actually found the recipe still in my moms cook book….
1 cup peanut butter
1 cup corn syrup
1 1/2 cups nonfat dry milk crystals
1 1/4 cups sifted powdered sugar
Mix all ingredients together. Roll into balls. and roll into powdered sugar. Makes 3 dozen.
WOW! Could it get any better than that? I don’t think so. They were delightful. I think I ate like 10 at a time. I think once I just made two huge balls and my brother and I split them 🙂 They were so good. Since then, I grew up and had kids and realized how bad they were for us. Thankfully, my next door neighbor introduced me to a healthier option. I was a bit hesitant, but REALLY like them now. I have found a few different recipes since and like them all. Here are two that I have adapted to our liking!
Peanut Butter Balls with Oat Flour
1 3/4 cup oats blended into flour
1/2 Cup Honey
1/4 C Ground Flax seeds
1 C Natural Peanut Butter
Chocolate Chips, nuts, raisins (optional)
Mix well roll into bite size balls and Refrigerator
Peanut Butter Balls with Oats
{These ones are a bit more chewy, because you don’t grind the oats up}
1/2 C honey
2 C Oats
1/4 C Ground Flax seeds
1 C Natural Peanut Butter
Chocolate Chips, nuts
Mix well roll into bite size balls and Refrigerator
Try them, I promise you will like them, don’t try the others ones because you will really like them, and probably gain 10 lbs eating them!!
